Ayam percik and rendang kerang!

I haven't been cooking real food since I come back from Penang. However, since mom had her eye operation (replaced lense) I've been trying my hand on cooking.

Simple chicken soup.. its delicious ..

Fry chopped garlic and thinly sliced young ginger until aromatic, add water, add potatoes(sliced) let it boiled, add chicken & salt, reduce the heat and let it simmer until cooked.

I seldom use onion or shallot in my cooking, garlic is enough

And yesterday i cook roast chicken and rendang kerang.. Unfortunately the trusted spy camera tertinggal kat office so no picture

Roast chicken ( i made two)
Preheat oven at 190 degree celcius (ahha i don't know the oven tu guna celcius or farenheit)

Pound or Blendered dry peppercorn coarsely. Set aside first. Pound young ginger and heaps of garlic. Wash chicken. Combined the pounded mixture plus salt with a little bit of cooking oil (butter can be used too) Rub all over chicken.. no need to poke hole in the poor chicken body la.. sudah mati ..

Roast until golden.. yummy.. The oily dripping can be turn into tasty gravy too..

REndang kerang.
4 kilogram of kerang, rebus and take out the isi only.. Lucky we have Mak Mini to do this, else, my nails will be ruined.

Santan - for diet purpose, i kotak is enough la.
2 tablespoon of kerisik kelapa (fry fresh grated coconut until brown and then pound until it produce oil)
Salt and one tablespoon of gula melaka (or gula kabong)

To be pounded (blendered)
A handful of dry red chilies (soak it first)
a handful of bird eye chili (pedas ni)
Tiga serai
satu buku garlic.
one big red onion....... all blend until fine.

CAra..
Put 3 tablespoon of frying oil, fry the pounded ingredient, until berbau wangi, add santan and kerisik plus the gula kabong. Can add one slice of asam keping too.. stir stir stir.. then add the kerang... stir stir until thick..

Sliced daun kunyit finely and add.

Then I asked MAk mini to watch over the fire and I catch my Korean serial aahhaha. So she jaga until the rendang thicken. walla its done

Verdict

Roast chicken - tender and juicy, need a bit more of salt (puasa cannot taste la) chef of all cook aka my mom, said should be more crispy etc etc... The kids love it.

Rendang kerang - look better and taste better than what adik buy at pasar malam. Mind you for two sendok its RM4. Again tak cukup masin. but overall good.

HAHAHA chef shilla is emerging to take over chef of all cook place as champion in cooking.
